White Chocolate Cheesecake with Cranberry Sauce

Ingredients:

  1. Cheesecake:
  2. 4 8 ounce package cream cheese, room temperature
  3. 1/2 cup plus 2 tablespoons sugar
  4. 1/4 cup all purpose flour
  5. 1/4 teaspoon salt
  6. 1 teaspoon vanilla extract
  7. 3/4 cup heavy whipping cream
  8. 4 large eggs
  9. 2 large egg yolks
  10. 8 ounces white baking chocolate, melted and cooled
  11. boiling water
  12. Cranberry Sauce:
  13. 1/2 cup cranberries
  14. 1 cup water
  15. 1 lemon, zested
  16. 3/4 cup sugar
  17. pinch of nutmeg
  18. Sour Cream Topping:
  19. 1 cup sour cream
  20. 2 tablespoons sugar
  21. 1/2 teaspoon vanilla extract
  22. 8 fresh raspberries, for garnish, optional
  23. powdered pink sugar, for garnish, optional
Directions:

Preheat oven to 300 degrees F.

Prepare 9-inch spring-form pan by wrapping outside of pan tightly with 3 layers of heavy-duty foil. Using paddle attachment on an electric mixer, beat cream cheese, sugar and flour until smooth. Add vanilla extract and salt. Slowly add heavy whipping cream until combined. Add eggs and egg yolks, one at a time, beating until incorporated after each addition. Stir in white chocolate and pour batter into prepared spring-form pan. Place pan into large roasting pan; add enough hot water to roasting pan to come halfway up sides of spring-form pan.

Bake cheesecake until set, but center moves very slightly when pan is gently shaken, about 2 hours. Turn off oven and crack oven door open to allow cheesecake to cool, about 1 hour. Remove cake from oven and from roasting pan; cool 1 more hour at room temperature.

For cranberry sauce, in a medium saucepan, combine the cranberries, water, sugar, lemon zest, and nutmeg. Bring to a boil then reduce heat to a simmer. Cook and stir until thickened, about 15 minutes. Remove from the heat; puree in a blender until smooth. Cool.

For sour cream topping, in a small mixing bowl, mix together the sour cream, sugar, and vanilla extract until well incorporated.

When ready to serve, plate cheesecake and top with sour cream topping, garnish with fresh raspberries, drizzle with cranberry sauce, and sprinkle with powdered pink sugar.
