Curried Pasta with Chicken and Fruit

Ingredients:

  1. 1 pound radiatore, cooked according to package directions and drained
  2. 12 ounces cooked chicken or turkey, cut into 1/2- inch pieces
  3. 3 cups seedless red grapes
  4. 1 can (20 ounces) pineapple chunks, drained
  5. 1/2 cup mayonnaise
  6. 2 Tablespoons lemon juice
  7. 1/4 cup frozen orange juice concentrate, thawed
  8. 1 Tablespoons curry powder
  9. 1 bunch scallions, sliced
Directions:

Toss chicken, grapes and pineapple together in a large bowl.

In a medium bowl, whisk together mayonnaise, lemon juice, orange juice concentrate and curry powder.

Stir pasta into fruit mixture. Stir dressing into pasta and fruit and mix well. Sprinkle scallions over salad and serve.
