Easy Parmesan Potatoes

Ingredients:

  1. 1/2 cup Land o Lakes butter, melted
  2. 1 teaspoon salt
  3. 1/2 teaspoon pepper
  4. 6 medium Idaho baking potatoes, washed, unpeeled, cut into 1/8-inch slices (about 6 cups)
  5. 1/4 cup grated Parmesan cheese, divided
  6. 1/4 cup finely chopped red bell pepper
  7. 2 Tablespoons chopped fresh parsley
Directions:

1. Heat oven to 350 degrees F. Combine butter, salt and pepper in large bowl. Add potatoes; toss to coat.

2. Layer half of potatoes in ungreased 13x9-inch baking pan; sprinkle with half Parmesan cheese. Layer with remaining potatoes.

3. Cover with aluminum foil. Bake for 30 minutes. Uncover; sprinkle with remaining cheese. Continue baking, uncovered, for 20 to 30 minutes or until potatoes are crisply tender.

4. Sprinkle with red pepper and parsley before serving.
