Heat grill to medium high heat. Rub chicken with balsamic vinegar to tenderize. Grill chicken breasts for 6 minutes on each side or until juices run clear. Remove chicken from grill and allow to stand for 5 minutes to reach room temperature.
Top each breast with a layer of tomato, basil, and mozzarella, using 2 pieces of each. Drizzle the entire dish with olive oil and top with black pepper and salt, to taste. Serve with crusty Artisan bread.
