Chicken Caprese Salad

Ingredients:

  1. 4 pieces boneless, skinless chicken breasts
  2. 2 to 3 teaspoons (a few good splashes) balsamic vinegar
  3. 8 slices firm tomato
  4. 8 slices fresh basil
  5. 8 slices fresh mozzarella or fresh smoked mozzarella
  6. Extra virgin olive oil
  7. Cracked black pepper to taste
  8. Sea salt, to taste
Directions:

Heat grill to medium high heat. Rub chicken with balsamic vinegar to tenderize. Grill chicken breasts for 6 minutes on each side or until juices run clear. Remove chicken from grill and allow to stand for 5 minutes to reach room temperature.

Top each breast with a layer of tomato, basil, and mozzarella, using 2 pieces of each. Drizzle the entire dish with olive oil and top with black pepper and salt, to taste. Serve with crusty Artisan bread.
