Pork Tenderloin with Garlic Cilantro Butter and Cashew Rice

Ingredients:

  1. 1-1/2 pounds pork tenderloin
  2. 1/4 cup roasted garlic and oil (recipe follows)
  3. 1/2 cup olive oil
  4. 1/4 bunch fresh cilantro, chopped
  5. 3 Tablespoons lime juice
  6. Freshly ground pepper
  7. Roasted Garlic:
  8. 12 cloves garlic, peeled
  9. olive oil
  10. Cashew Rice:
  11. hot cooked rice
  12. 1 teaspoon grated ginger
  13. green onion, sauteed
  14. garlic, sauteed
  15. 1/2 cup cashews
  16. Garlic Cilantro Butter:
  17. 2 sticks (1/2 pound) butter
  18. 1/4 cup fresh cilantro
  19. 2 Tablespoons roasted garlic (see recipe)
  20. 2 Tablespoons lime juice
Directions:

Cut tenderloins crosswise into 1-inch pieces and flatten slightly. Combine roasted garlic (see recipe below), olive oil, cilantro, lime juice and pepper; marinate pork in mixture 4 hours, refrigerated.

Remove pork from marinade; pan-broil in heavy skillet over medium-high heat 2 to 3 minutes per side. Serve atop Cashew Rice (see recipe below); top each serving with 1 teaspoon of Garlic-Cilantro Butter (see recipe below).

Roasted Garlic:
Place peeled garlic cloves in small baking dish. Cover with olive oil. Bake at 350 degrees F. for 45 minutes until garlic is soft.

Cashew Rice:
To hot rice cooked, stir in grated ginger, sauteed green onion and garlic, and cashews.

Garlic-Cilantro Butter:
Process together butter, fresh cilantro, roasted garlic and lime juice.
