Peanut Noodle Salad

Yield:
8 servings

Ingredients:

  1. 1 pkg. (8 oz.) vermicelli noodles
  2. 1/3 cup peanut butter
  3. 1/4 cup soy sauce
  4. 1/4 cup orange juice
  5. 1/4 teaspoon ground red pepper
  6. 3 carrots, shredded
  7. 1 large red bell pepper, cut into thin strips
  8. 6 green onions, sliced
  9. 1/2 cup dry roasted peanuts
Directions:

Break noodles into thirds. Cook and drain as directed on package. Rinse with cold water; drain. Mix peanut butter, soy sauce, orange juice and red pepper until smooth. Toss noodles, peanut butter mixture and remaining ingredients together. Chill before serving.
