Gazpacho Guacamole

Ingredients:

  1. 1 avocado, peeled and chopped
  2. 1/2 cup onion, chopped
  3. 1 tomato, chopped
  4. 1/2 cucumber, peeled and chopped
  5. 1/2 teaspoon paprika
  6. 1/2 teaspoon salt
  7. 1 jalapeno pepper, minced
  8. 1/8 teaspoon chili powder
  9. 1 Tablespoon sour cream
  10. 1 Tablespoon parsley, chopped
Directions:

Place avocado, tomato, jalepeno, cucumber and onion in a medium bowl. Stir together.

Add paprika, salt and chili powder; stir to combine.

Stir in sour cream and parsley.

Refrigerate for at least 1 hour.
