Fruit And Rice Salad

Ingredients:

  1. 1 can unsweetened pineapple chunks
  2. 2 cups cooked rice
  3. 1/2 cup strawberries, quartered
  4. 1/2 cup pear, sliced
  5. 1/2 cup peach, sliced
  6. 1/2 cup banana, sliced
  7. 2 tablespoons plain yogurt
  8. 1 tablespoon honey
  9. 4 cups baby spinach
Directions:

Drain pineapple, reserving 1/4 cup juice. In a large bowl, combine the pineapple, rice, strawberries, pear, peach and banana.

In a small bowl, combine the yogurt, honey and reserved pineapple juice. Pour over fruit mixture and stir to coat. Line salad plates with spinach; top with fruit mixture.
