Summer Pasta

Yield:

Ingredients:

  1. 1-1/2 cups red tomatoes
  2. 1-1/2 cups yellow tomatoes
  3. 1/4 cup olive oil
  4. 3 tablespoons red wine vinegar
  5. 1/2 teaspoon garlic, minced
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon pepper
  8. 1 pkg. (16 oz.) Farfalle pasta
  9. 1/2 cup canned corn
  10. 1/2 cup zucchini, diced
  11. 1/4 cup fresh basil, chopped
Directions:

In a large serving bowl, combine tomatoes, olive oil, vinegar, garlic, salt and pepper. Set aside.

Cook pasta according to package directions; drain. Add pasta to tomato mixture, corn, zucchini and basil. Toss and serve at room temperature.
