Cajun Chicken with Chile Cream Sauce

Ingredients:

  1. 4 boneless skinless chicken breasts
  2. 2 teaspoons Cajun seasoning
  3. 1 Tablespoon olive oil
  4. 1 can (10.75 oz.) Cream of Chicken soup
  5. 1 can (4 oz.) green chiles
  6. 1 teaspoon lime juice
  7. 1/4 cup nonfat sour cream
  8. Hot cooked yellow rice
  9. 1/2 cup water
  10. Lime zest
Directions:

Season chicken with cajun seasoning.

Heat oil in skillet over medium heat. Add chicken and cook for 8 to 10 minutes until browned turning once.

Meanwhile combine soup, water, chiles and lime juice in a medium saucepan and warm over medium heat. Stir in sour cream and continue to heat through.

Place chicken breasts over hot rice and drizzle with chile cream sauce. Sprinkle with lime zest. Serve with additional sauce.
