Classic Rice Salad

Ingredients:

  1. 3 cups cold cooked rice
  2. 1/2 cup finely chopped onion
  3. 1/2 cup chopped sweet pickles
  4. 1 teaspoon salt
  5. 1/2 teaspoon pepper
  6. 1 cup mayonnaise
  7. 1 teaspoon prepared mustard
  8. 1 jar (2 oz.) diced pimentos
  9. 4 chopped, hard cooked eggs
Directions:

Blend rice, chopped onion, pickles, salt, pepper, mayonnaise, mustard, pimentos and hard cooked eggs thoroughly. Chill completely. Serve on lettuce leaves.
