Slow Cooker Orange Spiced Sweet Potatoes

Ingredients:

  1. 2 pounds sweet potatoes, peeled and diced
  2. 1/2 cup dark brown sugar
  3. 1/2 cup (1 stick) butter, cut in small pieces
  4. 1 teaspoon cinnamon
  5. 1/2 teaspoon nutmeg
  6. 1/2 teaspoon orange zest
  7. Juice of 1 orange
  8. 1/4 teaspoon salt
  9. 1 teaspoon vanilla extract
  10. Toasted pecans, chopped*
Directions:

Place sweet potatoes, brown sugar, butter, cinnamon, nutmeg, orange zest, orange juice and salt in slow cooker. Cover and cook on high for 2 hours or until potatoes are tender.

Stir in vanilla extract. Sprinkle with toasted pecans before serving.

*To toast pecans:
Preheat oven to 350 degrees F. Spread the pecans evenly on a baking sheet and toast for 8 to 10 minutes.
