Herbed Tomato Soup

Ingredients:

  1. 2 tablespoons butter
  2. 1/2 cup finely chopped onion
  3. 2 tablespoons flour
  4. 1 quart tomato juice
  5. 1 can (14.5 oz.) Italian style diced tomatoes
  6. 2 cups milk
Directions:

Melt butter in Dutch oven; add onion. Cook over medium heat, stirring occasionally, until onion is softened. Stir in flour, stirring constantly, until mixture is smooth and bubbly. Add tomato juice and diced tomatoes. Cook, stirring occasionally, until mixture comes to a boil. Slowly stir in milk; continue cooking until heated through.
