Crispy Chicken with Honey Dipping Sauce

Ingredients:

  1. 1 cup mayonnaise
  2. 1/4 cup honey
  3. 2 Tablespoons Dijon mustard
  4. 2 Tablespoons peanut butter
  5. 4 boneless, skinless chicken breast halves, cut into strips
  6. 1 1/2 cups finely crushed potato chips
Directions:

Mix mayonnaise, honey, mustard and peanut butter. Remove 1/2 cup of the mixture; set remaining aside.

Brush chicken with 1/2 cup mayonnaise mixture; coat with crushed chips. Place on greased cookie sheet.

Bake at 425 degrees for 7-9 minutes. Turn and bake an additional 5 minutes or until lightly browned. Serve with remaining dipping sauce.
