Apple-Tortellini Salad

Yield:
Makes 6 servings

Ingredients:

  1. 3 tablespoons frozen apple juice concentrate, thawed
  2. 3 tablespoons light corn syrup
  3. 1 teaspoon cider vinegar
  4. 2 teaspoons firmly packed brown sugar
  5. 1/8 teaspoon garlic salt
  6. Dash of white pepper
  7. 1 pkg. (9 oz.) refrigerated cheese-filled tortellini
  8. 2 cups diced or cubed red apples
  9. 2 cups shredded salad greens
  10. 1 cup sliced fresh strawberries
  11. 1/2 cup thinly sliced celery
  12. 1/4 cup sliced green onions
  13. 2 tablespoons pine nuts, toasted, optional
Directions:

In a small bowl, combine the apple juice concentrate, corn syrup, vinegar, brown sugar, garlic salt and pepper. Cover and refrigerate.

Cook the tortellini according to package directions. Drain and cool thoroughly.

In a large mixing bowl, combine the tortellini, apples, salad greens, strawberries, celery, green onions and, if desired pine nuts. Pour the apple juice dressing over the salad and toss to combine.
