Chicken Caesar Pasta Salad

Yield:
Makes 4-5 servings

Ingredients:

  1. 1/2 cup mayonnaise
  2. 1/4 cup grated Parmesan cheese
  3. 1/4 cup low-fat milk
  4. 2 tablespoons lemon juice
  5. 2 cloves garlic, minced
  6. 1 small head romaine lettuce, cut crosswise into 1/2-inch-wide strips
  7. 1 lb. boneless, skinless chicken breast, broiled, grilled OR poached and thinly sliced
  8. 8 ounces twist pasta, cooked, rinsed with cold water and drained
  9. Freshly ground pepper
Directions:

In large bowl combine mayonnaise, Parmesan cheese, milk, lemon juice and garlic. Add lettuce, chicken and pasta; toss to coat. Season to taste with freshly ground pepper.
