Mixed Greens with Black Beans and Warm Bacon Dressing

Ingredients:

  1. 3 strips thick-sliced bacon (sliced crosswise into 1/2- inch strips)
  2. 2 shallots, minced
  3. 1 1/2 Tablespoons white wine vinegar
  4. 3 cups mixed baby lettuce
  5. 3/4 cup black beans, rinsed and drained
  6. 1 1/2 ounces goat cheese, crumbled
  7. 1 mango, sliced for garnish
  8. Salt, to taste
  9. Pepper, to taste
Directions:

In medium skillet over medium-high heat, fry bacon until crisp. Remove bacon; place on paper towels to absorb grease.

Cook shallots in bacon grease over medium heat, until lightly browned, stirring frequently. Stir in white wine vinegar. Season to taste with salt and pepper.

Toss warm dressing with mixed baby lettuce, bacon and black beans. Place on 2 plates and top with goat cheese. Garnish with mango slices.
