Broccoli and Cheese Soup

Yield:
6 - 8 servings

Ingredients:

  1. 2 tablespoons onion, finely chopped
  2. 2 tablespoons butter
  3. 3 tablespoons flour
  4. 1/2 teaspoon salt
  5. 1/8 teaspoon pepper
  6. 2 cups milk
  7. 1 cup shredded cheddar cheese
  8. 2 cubes chicken bouillon
  9. 1 1/2 cups water
  10. 1 pkg. (10 oz.) frozen, chopped broccoli
Directions:

In large saucepan, cook onions in butter until tender. Stir in flour, salt and pepper until well blended. Add milk and cook until thickened, stirring constantly. Add cheese and stir until melted. Remove from heat. In separate pan dissolve bouillon in water. Bring to boil. Add broccoli and cook until done (according to package directions.) Add broccoli to cheese mixture. Heat through. Serve hot.
