Marinated Chicken Salad

Yield:
4 portions

Ingredients:

  1. 3/4 cup salad oil
  2. 1/4 cup cider vinegar
  3. 4 teaspoons onion powder
  4. 1 1/2 teaspoons basil leaves, crushed
  5. 1 1/2 teaspoons oregano leaves, crushed
  6. 3/4 teaspoon garlic powder
  7. Dash ground black pepper
  8. 2 cups diced cooked chicken (3/4 lb.)
  9. 1/2 lb. mushrooms, sliced
  10. 2 medium-sized tomatoes, cut in 1/2-inch cubes ( 2 cups )
Directions:

In a small bowl combine oil, vinegar, onion powder, basil, oregano, garlic powder and black pepper. In a large bowl toss chicken, mushrooms and tomatoes with seasoned oil mixture. Cover and refrigerate at least one hour before serving.
