Health Bars

Ingredients:

  1. 2 cans (6 ounces each) low sodium V-8 Vegetable Juice
  2. 1 cup chopped dried apricots
  3. 1 cup chopped dates
  4. 1 cup raisins
  5. 1/4 cup shortening
  6. 1/2 cup unsalted margarine
  7. 1 cup packed light brown sugar
  8. 1 3/4 cups all purpose flour
  9. 1 1/2 cups quick-cooking oats, uncooked
  10. 1 teaspoon baking soda
Directions:

Preheat oven to 400 degrees F

In 1- quart saucepan over medium heat, combine juice, apricots, dates and raisins. Bring to boil; reduce heat to low. Simmer 5 minutes, stirring often. Remove from heat.

In a large bowl beat shortening, margarine and brown sugar until light and fluffy.

Meanwhile in medium bowl, combine dry ingredients; mix well. Stir dry ingredients into sugar mixture. Stir in fruit mixture. Pour into 13 x 9 x 2- inch baking pan.

Bake for 25 minutes or until done. Cool slightly. Cut into 24 bars.
