Spaghetti with Zucchini Sauce

Yield:
Makes 4 to 6 servings.

Ingredients:

  1. 1 medium onion, sliced
  2. 1/4 cup olive oil
  3. 2 medium zucchini, sliced (about 6 cups)
  4. 3 cups diced tomatoes
  5. 1/2 teaspoon salt
  6. 1 bay leaf
  7. 1/4 teaspoon pepper
  8. 1/4 teaspoon basil leaves
  9. 1/4 teaspoon oregano leaves
  10. 8 ounces Mueller's spaghetti
  11. Grated Parmesan cheese
Directions:

In large skillet or pot, saute onion in hot oil until crisp-tender. Add zucchini, tomatoes, salt, bay leaf, pepper, basil and oregano. Simmer covered for 15 minutes; uncover and simmer 10 minutes longer. Discard bay leaf.

Meanwhile, cook spaghetti as directed on package; drain.

Serve spaghetti topped with zucchini sauce and grated Parmesan cheese.
